Why I started this group

Hey you guys! I got an email from "The Biggest Loser" newsletter and decided that I could start a group that would help each other in reaching our weight goals for 2010! I have been through weight watchers, medical weight loss, etc (No surgeries for me) and have lost close to 60 lbs, only to gain a good 10 back these last few months. So I want to lose the 10 I gained plus the 30 I still need and want to lose and I thought that others may feel the same way and want to go the journey with me :)

I have a recipe to share....yummy...

CHICKEN AND DUMPLINGS STEW

INGREDIENTS:

(1) Box of Bisquick Mix (For Dumplings)

(1) Can of Cream of Chicken Soup
(1) Can of Cream of Mushroom Soup
(1) Small Onion (Diced)
(1) Box of Frozen Cut Green Beans or Frozen Peas
(1) Cup of Fresh Diced Carrots
(2) Large Potatoes Cut Up Into Medium Size Pieces
(2) PORTIONS OF YOUR CHICKEN

(2) Tablespoons of Corn Starch Mixed in Water (about ¼
Cup) for Thickening of Soup/Stew Sauce

ALL OF THIS WILL GO INTO YOUR CHICKEN STOCK THAT HAS BEEN BROUGHT UP TO A VERY HOT BOIL…EXCEPT THE CORN STARCH AND BISQUICK MIX WHICH “Corn Starch” GETS ADDED AFTER VEGGIES ARE COOKED TO THICKEN, THEN THE “Bisquick (Dumpling) Mix” GOES ON TOP AT THE VERY END OF COOKING THE INGREDIENTS!!!!

While boiling on medium high heat add all of the above ingredients except the starch mixture and bisquick mixture.

Cook and stir without leaving alone so not to stick to pot until potatoes are soft but not mushy. Veggies will be just right.

While cooking make your bisquick mixture. 4-½ cup of dry Bisquick mixed with 1-1/3 cup of milk (if too thick just add a teaspoon of milk at a time until thick..not dry but not too mushy) to make the dumplings.

Add in your CORN STARCH Thickening Mixture and Stir until Stew starts to thicken.

AT THIS TIME REMOVE ABOUT (3) CUPS OF THE SOUP/STEW MIXTURE AND SET ASIDE TO COOL IN A BOWL FOR YOUR CHICKEN POT PIE MEAL. WILL KEEP FOR A FEW DAYS.

Bring to boil then spoon Bisquick onto top of soup (like uneven balls) to cover entire top. They will sink a little from the weight of the Dumplings but will rise to the top right away. Reduce heat to medium. Cook the dumplings uncovered for 10 minutes then cover for 10 minutes or a little more…they will be like flaky bisquits.

Serve right away.

Also can reheat later in the microwave.

Thank you...this is perfect for me. After having two knee surgeries a couple of years ago I gained so very much weight but so far in a little over a year I have lost 80 pounds. It is so hard. I want to lose about 40 more...

I need to lose the 20 pounds I gained just by sitting at the computer. Yes I am working, listing, surfing, blogging, chatting and eating, yep eating! What else is there to do but eat and list, eat and chat, eat and blog, you get the picture. Granted it took 3 years to get this way, but I don't want to see what I might look in another 3 years. So here be I hoping to get some pounds lost into cyberspace as this is where it started :)

A good teacher for Yoga is Rodney Yee....a good beginner one is a good way to start...Have not tried Thi Chi...heard it is really good for you. I have a problem ...I limp,am shorter on one side than the other and things are fused..so balance can be a problem. I really try to keep flexible and work to keep my core strong..afraid of not being able to move at all....I know you probably have that same fear....Wish you well...just be careful whatever you decide .
